Simple and economic - another one of those recipes inspired by wandering around the supermarket, you see something, you know have stuff in the cupboard that might work with it and it might even pass naysayers (children in this household).
So, Monday night dinner here it is, you will need:
A non stick frying pan with a tight fitting lid
6 chicken thighs
1 Tbsn Chinese five spice
1 can chopped tomatoes
100g tomato puree
3 red peppers, chopped
6 cloves garlic (minced)
100g homemade marmalade
15g homemade tomato salsa
8-16 tacos
1. Dust the chicken thighs top and bottom in the five spice, leave for 30 minutes.
2. Heat the pan on a medium heat.
3. Add the chicken to the dry pan, cook, turning regularly until showing signs of colour – around 5 minutes each side.
4. Add the peppers, cook for a further 5 minutes.
5. Add the tomato puree, marmalade and salsa.
6. Simmer for 10 minutes.
7. Add the tinned tomatoes and simmer for 1 hour a low heat.
8. Service with tacos.
