Recipes are often created for different reasons, I was reminded recently that a number of my past recipes from 30 years ago often had chopped tomatoes in them.  I could say it was because adding fruit and vegetables to dishes is a positive thing as at the time, the contract caterer I worked for held a prestigious ‘Heart Beat Award’ issued by the local authority environmental health department. 


But in reality, it was for commercial benefits.  If I remember correctly, getting 30 dishes out of a 5kg bag of meat and all the other ingredients (that was selling for 75p per meal) was challenging even, in the 90’s.

 

Which segways into the next recipe, sometimes you need something quick, nutritious and from the freezer.  I imagine we all have memories of freezer dinners, be it some homemade batch cooking or the day (in my case, my Mam) someone cleared out the freezer and it was freezer roulette – one sausage, a potato waffle, a spoonful of beans with a mini pizza on the side! 


Or maybe you just want something with an award winning ingredient, like this from Farmfoods.


You will need:


No chopping veg or meat, or cooking chicken from raw!  All ready in less than 15 minutes. Great with Farmfoods frozen mash and greens.


Farmfoods ingredients:

·     400g of roasted and sliced cooked chicken

·     350g pasta

·     100g diced onion

·     1 tbsp flour

·     2 x frozen garlic blocks

·     Jar of red pesto

·     300ml chicken stock

·     150ml Elmlea


How to make:

·       Place a splash of oil, onions and garlic to a large pan on medium heat. Cook for 2 minutes until softened and then stir in the flour.

 

·       Add the chicken and pesto and stir to combine.

 

·       Gradually pour in the stock. Bring to the boil, reduce to a simmer for 5-7 minutes, stirring regularly until the sauce has slightly thickened.

 

·       Stir in the Elmlea and serve.
