Often made with chicken legs but I much prefer chunks of chicken or you could try a meat free version like star fruit. This works really well on the BBQ, but I’ve done this one in the air fryer as it’s freezing outside.
Ingredients
4 skinless chicken breasts, cut into large chunks
½ lemon
6 garlic cloves
1 tbsp La Chinata paprika
7cm fresh ginger
3 tbsp light olive oil
1½ tsp cardamom seeds
2 tbsp garam masala
250ml natural yogurt
Method
Add the juice from the lemon juice, paprika, salt to the chicken and mix well.
Blend the garlic, ginger, oil, cardamom, garam masala and yoghurt, add to the chicken, mix
well, cover and leave in the bottom of the fridge overnight.
Remove the chicken from the marinade, I chose to add to the air fryer on a liner, well spaced out (the chicken, not me).
Put on full heat for 4 minutes, brush with oil whilst turning for 3-5 minutes until cooked.
Serve with cucumber and raita and salad.
