Too soon for a banana bread recipe?
Banana bread used to fly off the shelf when I was a catering manager (probably because I never made it), it was made by a lady I recruited from a well established café in Sunderland.
My word she could bake and my word you probably just logged off to look for Delia's banana bread.

This recipe is my own, I spent hours, at least one, trying out the fastest banana bread recipe I could find for the air fryer.
But seriously...
Temperatures will vary – I used a Ninga air fryer on pre-set bake mode (160c) first time and the top started to singe a bit and the middle was still raw. Second time I put it on bake mode (150c) and the middle was a tiny bit raw probably as I tried butter so third time lucky. 150c worked with veg oil and Kev didn't even swear once.
You will need:
3 overripe ripe bananas, around 225g if the skins are very black then that is ideal, the more minging they look, the better (but not mouldy).
3 large eggs
100g dark brown sugar
150ml vegetable oil
275g white self-raising flour (sieved)
1 tsp ground mixed spice
1 tsp baking powder
Preheat air fryer (I know that sounds daft) at around 160c
Grease and line a 2lb loaf tin with an air fryer liner
Peel the bananas, add to a mixer bowl and mash on a medium speed. Add the sugar, eggs, spice and oil. Whisk on high speed until well mixed/ liquid
Fold in the sieved flour and gently mix
Add to the prepared tin and cook on bake setting* for 40* minutes, or until you can insert a sharp knife which comes out clean (not goey)
Leave in the tin for 10 minutes
Wrestle the tin out of the air fryer drawer, turn upside down onto wire rack, gently remove the liner, flip back over and leave to cool completely
At this point, other people in the household may become aware there is a cake on offer. Be prepared.
There are many toppings, such as lemon icing, but I think you should eat it just warm.
Feel free to jazz up with a hint of coffee or 10 grams of nuts such as broken walnuts or
pecans. This is your banana canvas!
